Fresh vegetable and seitan spring rolls with Nuoc Cham sauce
Ingredients:
6 rice paper wafers
1 carrot
60 grams of lombard
40 grams of garlic sprouts
150 grams of seitan
Cilantro
For the Nuoc Cham sauce
The juice of 2 limes
1 tablespoon coconut sugar
150 ml of water
2 tablespoons of soy sauce
1 small garlic
1 or 2 chili peppers
Ginger
Lime zest
Instructions
Step 1: Cut the carrots and the lombard into very thin sticks and cut the seitan into strips.
Step 2: In a separate bowl, add the chilli peppers, ginger, coconut sugar, lime juice, soy sauce and add a bit of lime zest to give it freshness. Mix well and remove.
Step 3: Dip the rice paper wafers in warm water for half a minute and let drain.
Step 4: Roll the ingredients from the end of the wafer to assemble the rolls. Add cilantro to taste.
Step 5: Serve together with the sauce.
