Typical dishes from Greece A Greek recipe: Pork souvlaki
Would you like to prepare a delicious pork souvlaki with pita bread? It’s one of the most popular dishes in Greece! Follow these steps, and transport yourself to the Hellenic country.
Ingredients (for 4 people)
For the pita bread
320 gr. bread flour, 2 tablespoons of dry yeast, 1 tablespoon of salt, 1 pinch of sugar, 80 ml of water, 160 ml of whole milk
For the filling
450 gr. pork loin, salt, black pepper to taste, 1 potato, 4 tablespoons of greek yogurt, oregano to taste, 1 onion, arugula or lettuce, 1 tomato, mustard (optional)
Preparation
Step 1. Making the pita bread dough: in a bowl, dissolve the dry yeast, add water and milk. Add salt, sugar and bread flour. Knead the dough with your hands until you get a homogeneous consistency that does not stick to your hands. Make a ball and cover with a cloth or plastic wrap to let the dough rest for at least 1 hour.
Step 2. Once the dough has rested, divide it into four parts and, on a surface sprinkled with flour, stretch the dough with the help of a rolling pin.
Step 3. Let's make the bread: in a hot pan, take a spoonful of olive oil and fry the bread on both sides so that it is well roasted.
Step 4. Cut the meat into thick cubes, stick it on skewers and season with a pinch of salt, black pepper and oregano.
Step 5. Sauté the skewers in a pan with a few drops of oil or roast them on the grill.
Step 6. Cut the potatoes into thin sticks, like fries. Fry them in olive oil and drain them on a paper towel.
Step 7. Cut the tomato into segments and the onion into thin slices.
Step 8. Mounting our souvlaki: With the bread, make a cone or a kind of envelope and fill it with the meat, tomato, onion, a spoonful of Greek yogurt and French fries to taste. As an option, you can also include mustard.
CHEF'S TIP. You can marinate the skewers overnight in a yogurt-based sauce with the spices to make the meat juicier.
